Roasting Indian Robusta Without the Bitterness
Most roasters approach their first robusta as though it were a dense arabica and get something aggressive. The adjustments are not large, but they are specific.
Robusta is a different species with different physical properties, and roasting it on an arabica profile is the main reason people conclude they dislike it.
What is physically different
Denser. Robusta beans are typically denser than arabica at the same screen. Heat moves into the centre more slowly, so the outside can run ahead.
Smaller and rounder. Less surface area per bean relative to mass, and different tumbling behaviour in the drum. A robusta and an arabica in the same batch do not track each other.
Lower sugar, higher chlorogenic acids. Less material for the Maillard and caramelisation reactions that build sweetness, and more of the precursors that produce bitter and astringent compounds. This is the chemical reason robusta reads as harsh when pushed.
Roughly twice the caffeine, which is itself bitter.
The adjustments
Charge hotter, and commit. Robusta's density means it needs a solid energy input to get heat to the centre. A timid charge produces a bean that is developed on the outside and underdone within, which tastes green and harsh — exactly the profile people blame the species for.
Extend the middle. Give it time between drying and first crack. This is where sweetness is built, and robusta has less to work with, so it needs the time rather than less of it.
Do not stall. A flat or falling rate of rise through the middle is worse in robusta than in arabica, because there is less sugar to caramelise and the result is baked and papery.
Go a little darker than you would for arabica — but not to the edge. Robusta holds structure at darker roasts and that is part of why it suits espresso. The failure mode is going past the point where its own bitterness compounds dominate, and that point arrives faster than in arabica. Somewhere in the medium to medium-dark region is where most Indian washed robusta lands well.
Develop properly. Under-development is the most common robusta roasting fault by a distance, and it produces precisely the peanut-shell, rubbery, astringent character that the species' reputation rests on.
Monsooned robusta is the exception
Everything above assumes ordinary robusta. Monsooned robusta reverses the density point.
The monsooning process swells the bean and lowers its density substantially, so a monsooned lot takes heat far more readily than its screen suggests. Charge gentler, watch the approach to first crack, and be aware that the bean starts pale gold so colour is a poor guide early.

Blending: roast separately
If robusta is a meaningful proportion of a blend, roast it separately and blend after.
Pre-blending is operationally simpler and it means one of the two species is roasted on the other's profile. With robusta the mismatch is larger than between two arabicas, because the density, size and target development all differ. Post-blending costs an extra batch and is usually worth it. Diagnosing what went wrong

Start with a good lot
Roasting cannot rescue a badly picked, badly dried robusta, and trying to learn the species on a cheap commodity lot teaches the wrong lessons.
Begin with a top washed grade — Kaapi Royale in India, or the equivalent elsewhere — get a profile that works, and only then decide what the species is worth to you. See Indian robusta.
